  • 3 cups Cooked chicken Rotisserie chicken is ideal
  • 1 can Cream of chicken soup Can be substituted with cream of mushroom
  • ½ cup Sour cream Can substitute with Greek yogurt
  • ½ cup Milk Use any type of milk
  • 2 tablespoon Butter Melted
  • ½ cup Shredded cheddar cheese For mixing in
  • 1 cup Mixed vegetables Frozen or fresh
  • ¼ teaspoon Garlic powder For seasoning
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black pepper Adjust to taste
  • ½ teaspoon Dried thyme Optional
  • 2 sleeves Ritz crackers Crushed
  • ¼ cup Grated Parmesan Optional for topping

Equipment

  • 1 19x13 baking dish Glass or ceramic works best

Method
 

  1. Preheat oven to 350°F. Grease baking dish.
  2. Mix soup, sour cream, milk, and seasonings.
  3. Add chicken, vegetables, and cheese. Stir well.
  4. Spread mixture into baking dish.
  5. Crush Ritz crackers and mix with melted butter.
  6. Sprinkle cracker mixture over casserole.
  7. Bake for 25-30 minutes until golden and bubbly.
