Ingredients

  • 3 cups Cooked chicken - Rotisserie chicken is ideal
  • 1 can Cream of chicken soup - Can be substituted with cream of mushroom
  • ½ cup Sour cream - Can substitute with Greek yogurt
  • ½ cup Milk - Use any type of milk
  • 2 tablespoon Butter - Melted
  • ½ cup Shredded cheddar cheese - For mixing in
  • 1 cup Mixed vegetables - Frozen or fresh
  • ¼ teaspoon Garlic powder - For seasoning
  • 1 teaspoon Salt - Adjust to taste
  • 1 teaspoon Black pepper - Adjust to taste
  • ½ teaspoon Dried thyme - Optional
  • 2 sleeves Ritz crackers - Crushed
  • ¼ cup Grated Parmesan - Optional for topping

Instructions 

  • Preheat oven to 350°F. Grease baking dish.
  • Mix soup, sour cream, milk, and seasonings.
  • Add chicken, vegetables, and cheese. Stir well.
  • Spread mixture into baking dish.
  • Crush Ritz crackers and mix with melted butter.
  • Sprinkle cracker mixture over casserole.
  • Bake for 25-30 minutes until golden and bubbly.
  • Rest for 5 minutes before serving.
