  • 2 Small plates (For rimming)

Ingredients

  • 1.5 oz vanilla vodka - Chilled
  • 1.5 oz coconut rum - Like Malibu
  • 2 oz half-and-half - Or coconut cream
  • 1 teaspoon grenadine - For pink color
  • ½ teaspoon pineapple juice - Optional
  • ¼ cup shredded coconut - Sweetened, for rim
  • 2 tablespoon honey - For rimming
  • 3 mini marshmallows - Garnish

Instructions 

  • Dip the rim of a martini glass in honey, then roll in shredded coconut to coat.
  • Combine vanilla vodka, coconut rum, half-and-half, pineapple juice, and grenadine in a shaker with ice.
  • Shake vigorously for 20 seconds until frothy and cold.
  • Strain into the prepared glass and top with floating marshmallows.

Notes

Use honey for the rim to ensure the heavy coconut flakes stay in place. Shake vigorously to create a frothy top that supports the marshmallow garnish.
