Ingredients
  

  • 1.5 oz vanilla vodka Chilled
  • 1.5 oz coconut rum Like Malibu
  • 2 oz half-and-half Or coconut cream
  • 1 teaspoon grenadine For pink color
  • ½ teaspoon pineapple juice Optional
  • ¼ cup shredded coconut Sweetened, for rim
  • 2 tablespoon honey For rimming
  • 3 mini marshmallows Garnish

Method
 

  1. Dip the rim of a martini glass in honey, then roll in shredded coconut to coat.
  2. Combine vanilla vodka, coconut rum, half-and-half, pineapple juice, and grenadine in a shaker with ice.
  3. Shake vigorously for 20 seconds until frothy and cold.
  4. Strain into the prepared glass and top with floating marshmallows.

Notes

Use honey for the rim to ensure the heavy coconut flakes stay in place. Shake vigorously to create a frothy top that supports the marshmallow garnish.
