Spring has officially sprung in our kitchen, and we are celebrating with the cutest drink imaginable. This Cottontail Martini is Max’s favorite "fancy drink" to help me make (he handles the marshmallow placement, of course). It’s a creamy, coconut-vanilla delight that blushes a soft pastel pink and is rimmed with fluffy coconut flakes. It literally looks like a bunny in a glass!

Why You Will Love This Cottontail Martini

You will love this recipe because it is the ultimate Easter brunch showstopper. It tastes like a tropical milkshake but with a sophisticated kick from the vanilla vodka. The texture is velvety smooth, and the rim adds a sweet, chewy crunch that makes every sip fun. Plus, it takes less than five minutes to shake up, so you can spend more time hunting for eggs and less time bartending.

How To Make Cottontail Martini

We start by prepping the glass because a festive rim is non-negotiable here. We dip the rim in honey or syrup and roll it in sweetened shredded coconut for that fluffy "bunny fur" look. Then, we shake up vanilla vodka, coconut rum, and cream with just a tiny splash of grenadine to get that perfect baby pink color. Strain it, top it with a cluster of mini marshmallows, and you are ready to hop into the weekend.

Cottontail Martini Ingredients

The Cocktail Base

  • 1.5 oz vanilla vodka
  • 1.5 oz coconut rum (like Malibu)
  • 2 oz half-and-half (or coconut cream for a richer version)
  • 1 teaspoon grenadine (just for the pink tint!)
  • ½ teaspoon pineapple juice (optional, for brightness)

The Garnish

  • 2 tablespoons honey or agave syrup (for rimming)
  • ¼ cup sweetened shredded coconut
  • 3–4 mini marshmallows (the "cotton tails")

Step by Step Method

Rim the Glass

  • Pour the honey onto a small shallow plate and the shredded coconut onto another.
  • Dip the rim of your martini glass into the honey, then roll it generously in the coconut until it looks fluffy and coated. Set aside.

Mix the Spirits

  • In a cocktail shaker filled with ice, combine the vanilla vodka, coconut rum, and pineapple juice.

Make it Pink & Creamy

  • Pour in the half-and-half and the splash of grenadine.
  • Mom Tip: Go easy on the grenadine! You want a soft pastel pink, not a hot neon pink.

Shake and Strain

  • Shake vigorously for 15–20 seconds until the outside of the shaker feels frosty.
  • Strain the mixture carefully into the prepared martini glass, being careful not to knock off the coconut rim.

Add the Tails

  • Gently float a small cluster of mini marshmallows in the center of the drink to look like a bunny tail (just like the picture).

MAX’S REACTION

"It looks like a bunny took a bath in a strawberry milkshake! I made myself a kid version with pink strawberry milk and extra marshmallows. The coconut on the glass is the best part to eat."

What Pairs Well With Cottontail Martini

This drink is sweet and creamy, so it pairs beautifully with brunch favorites. Serve it alongside savory quiches or deviled eggs to balance the sugar. It also goes perfectly with carrot cake or lemon bars for a full spring dessert spread.

Cottontail Martini Variations

The Chocolate Bunny

Add 1 oz of white chocolate liqueur to the shaker. It makes the drink even richer and tastes like a melted white chocolate Easter bunny.

Dairy-Free Hopper

Swap the half-and-half for canned coconut milk or oat milk. The coconut milk actually enhances the tropical flavor and keeps it ultra-creamy.

Peep-tini

Instead of marshmallows, float a yellow or pink marshmallow Peep on top of the drink for an extra festive touch.

Lemon Cottontail

Swap the vanilla vodka for citron vodka and skip the grenadine. You’ll get a bright yellow, lemon-meringue flavored drink that still looks adorable with the coconut rim.

Equipment

  • Cocktail shaker
  • Martini glass
  • Jigger or measuring shot glass
  • Two shallow plates (for rimming)
  • Mom Tip: If you don't have a shaker, a mason jar with a lid works perfectly. Just strain it through a small sieve!

Storage / Make Ahead / Serving Tips

Chill Your Glass

Place your coconut-rimmed glass in the freezer for 10 minutes before serving. It helps the coconut stick better and keeps your drink frosty longer.

Batching

You can mix the vodka, rum, and cream in a pitcher ahead of time. Store it in the fridge. When guests arrive, just shake with ice and pour!

The Pink Factor

If you don't have grenadine, a single drop of red food coloring or a splash of cranberry juice works to get that pink hue.

Top Tips for Best Cottontail Martini

To get the look exactly like the image, use mini marshmallows clustered in the center; they float better than one giant marshmallow. Also, shake the drink hard. The agitation aerates the cream, giving you a nice frothy surface that helps the marshmallows sit on top rather than sinking immediately. Finally, use sweetened coconut for the rim—unsweetened tends to be too dry and chewy.

Cottontail Martini Frequently Asked Questions

Can I make this without alcohol?

Yes! For a Cottontail cocktail mocktail, mix coconut milk, a splash of pineapple juice, vanilla syrup, and grenadine. Shake with ice and serve.

Does it taste like suntan lotion?

Not at all. The vanilla vodka and cream balance out the coconut rum, so it tastes more like a vanilla sponge cake with a hint of tropical fruit.

Can I use heavy cream?

You can, but it will be very thick (almost like a dessert). Half-and-half or whole milk is usually the perfect consistency for a martini.

How do I get the coconut to stick?

Honey is the best glue because it's thick. Water or lemon juice is too thin and the coconut will slide down the glass.
