I discovered cottage cheese bagels by complete accident during a pantry challenge week when we'd run out of bread and most baking supplies. With a hungry 7 year old demanding his morning bagel, I frantically searched for alternatives and stumbled across this incredibly simple recipe. The first batch came out of the oven looking somewhat misshapen but smelling heavenly. Max took one bite, his eyes widened with that unmistakable sparkle of breakfast approval, and he silently reached for a second piece before the first was even finished.

How To Make Cottage Cheese Bagels

These come together so quickly that I often start them while still sipping my first coffee. Here's my foolproof method:

Mix The Base

Smooth, creamy cottage cheese and egg mixture in a bowl, prepped for high-protein bagel dough. Save it For Later

- Blend 1 cup cottage cheese and 2 eggs until smooth
- Use a food processor, blender, or immersion blender
- The mixture should be completely smooth with no lumps
- This creates the protein rich foundation

Form The Dough

- Add 1½ cups self-rising flour and ¼ teaspoon salt
- Mix until it forms a slightly sticky dough
- If too sticky, add 1-2 tablespoons more flour
- Let dough rest for 5 minutes (perfect coffee-sipping time!)

Shape Your Bagels

- Divide dough into 4-6 equal portions
- Roll each into a smooth ball with floured hands
- Press thumb through center to create hole
- Gently twirl and stretch to form bagel shape

Bake To Perfection

A batch of homemade, golden-brown cottage cheese bagels with everything bagel seasoning, slightly uneven in shape, with a crisp, bubbled crust Save it For Later

- Place on parchment lined baking sheet
- Brush with egg wash for golden crust
- Add desired toppings
- Bake at 375°F for 20-25 minutes until golden and firm

Note: For that perfect bagel shop look, press the egg-washed tops directly into a plate of seasoning rather than sprinkling from above; this gives perfect, even coverage.

Cottage Cheese Bagels Substitutions

Flour Alternatives

  1. Self-rising flour → 1½ cups all-purpose + 2 teaspoon baking powder
  2. All-purpose → Whole wheat (use 25% less)
  3. Regular flour → Gluten-free blend + 1 teaspoon xanthan gum
  4. Standard → Almond flour (for keto cottage cheese bagels)

Cottage Cheese Options

  1. Regular cottage cheese → Low-fat (slightly less chewy)
  2. Cottage cheese → Greek yogurt (tangier flavor)
  3. Plain → Flavored cottage cheese (try chive!)
  4. Standard → Lactose-free cottage cheese

Add-In Ideas

  1. Plain dough → Add herbs like dill or chives
  2. Regular → Mix in grated parmesan
  3. Standard → Add garlic and onion powder
  4. Plain → Cinnamon and raisin for sweet version

Topping Swaps

  1. Everything seasoning → Sesame and poppy seeds
  2. Regular toppings → Shredded cheese
  3. Standard → Cinnamon sugar (for sweet bagels)
  4. Plain → Salt flakes and cracked pepper

Pro Tip: For keto cottage cheese bagels with no flour, replace the regular flour with 1¼ cups almond flour and add 2 tablespoons psyllium husk powder. The texture will be different, but still delicious!

Cottage Cheese Bagels Variations

  1. Mix 2 tablespoons ground flaxseed into dough
  2. Add 1 tablespoon chia seeds
  3. Top with sunflower and pumpkin seeds
  4. Great for extra protein and omega-3s

Pizza Bagel Spin

  1. Mix ¼ cup shredded mozzarella into dough

  • Add ½ teaspoon cinnamon to dough
  • Mix in ¼ cup raisins
  • Sprinkle with cinnamon sugar before baking

Equipment for Cottage Cheese Bagels

What I love about this recipe is how little special equipment you need:

  • Parchment paper
  • Food processor or blender (for smooth cottage cheese mixture)
  • Mixing bowl
  • Measuring cups and spoons
  • Baking sheet

How To Store Your Cottage Cheese Bagels

Counter Storage (1-2 days)

  1. Cool completely on wire rack
  2. Store in paper bag or loosely covered container
  3. Best eaten within 48 hours
  4. Keeps exterior crust crispy

Refrigerator Method (up to 5 days)

  1. Place in airtight container
  2. Separate layers with parchment paper
  3. Toast before eating for best texture
  4. Perfect for meal prep

Freezer Magic (up to 3 months)

  1. Cool completely
  2. Wrap individually in plastic wrap
  3. Place in freezer bag
  4. Label with date

To reheat frozen bagels, either microwave for 30 seconds and then toast, or thaw overnight in the refrigerator. I often make a double batch on Sundays specifically for freezing; it's so satisfying to have homemade bagels ready to go on busy mornings!

My Aunty Emma's Tasty Touch

My Aunty Emma; who ran a small bakery for years, added a genius twist to these cottage cheese bagels during her last visit. She suggested folding a thin layer of whipped cream cheese right into the dough before shaping.

"The cream cheese melts into little pockets during baking," she explained while working the dough with expert hands. "Creates these amazing cheese filled air pockets throughout."

She was absolutely right! The cream cheese creates these delightful little flavor bombs scattered throughout each bagel. Her method is simple: after mixing the dough, roll it out, spread with 2 tablespoons of whipped cream cheese, then fold and gently knead just a few times to create ribbons of cheese, not a fully blended dough.

Frequently Asked Questions

Is cottage cheese good for bagels?

Cottage cheese bagels is fantastic in two different ways! As an ingredient in the bagel dough itself, cottage cheese creates a protein rich, tender texture with a slight tanginess that enhances flavor. The high protein content produces a satisfying chew while keeping the inside moist. As a topping, cottage cheese makes a creamy, protein packed alternative to cream cheese; especially when mixed with herbs or a touch of honey. I often keep a small container in our fridge specifically for bagel mornings.

Why do bodybuilders eat cottage cheese before bed?

Bodybuilders love cottage cheese as a bedtime snack because it's rich in casein protein, which digests slowly, providing a steady release of amino acids throughout the night. This helps with muscle recovery during sleep. With approximately 25g of protein per cup and minimal carbs, it supports muscle building without excess calories. My brother in law (a dedicated gym goer) introduced Max to his bedtime "muscle pudding"; cottage cheese with a sprinkle of cinnamon that keeps him full until morning.

Is it healthy to eat cottage cheese for breakfast?

Cottage cheese makes an excellent breakfast choice! It's packed with protein (25g per cup) that keeps you full for hours, contains calcium for bone health, and provides B vitamins for energy. Its high protein to calorie ratio makes it especially satisfying for morning meals. I've noticed a huge difference in Max's mid-morning hunger levels since introducing cottage cheese to our breakfast rotation; whether in these bagels or simply served with fruit and a drizzle of honey.

What is good to mix with cottage cheese?

The versatility of cottage cheese is amazing! For sweet options, try fresh berries, sliced peaches, pineapple chunks, honey, cinnamon, or a sprinkle of granola. For savory combinations, mix in everything bagel seasoning, fresh herbs (chives, basil, dill), diced cucumbers and tomatoes, or a drizzle of olive oil with cracked pepper. Max's current favorite is cottage cheese with a swirl of applesauce and cinnamon; he calls it his "breakfast sundae."

Hi Bev! 😊 Yes, I add the flour to the processor. The dough is sticky at first, but a bit of flour on your hands or surface usually helps: no need to add too much. Hope they still turned out yummy! 💛

Hi Rhonda! 😊 If you’re using all purpose flour, you can add 1 ½ teaspoons of baking powder. Hope you enjoy the bagels! 🥯💕
