Watermelon Mojito

Ingredients
  

  • 1 cup Watermelon Seedless, cut into small cubes
  • 8–10 Mint leaves Fresh, plus more for garnish
  • ½ Lime Juiced, plus wedges for muddling
  • 2 oz White rum Optional, use vodka or coconut rum
  • 1 teaspoon Simple syrup Optional, to taste
  • ½ cup Sparkling water Or club soda
  • Ice Crushed preferred
  • Watermelon wedge For garnish
  • Mint sprig For garnish

Equipment

  • 1 Muddler Or use the back of a wooden spoon
  • 2 Tall glasses Mason jars work too
  • 1 Citrus juicer For fresh lime juice
  • 1 Knife For cutting watermelon and limes
  • 1 Cutting board Optional but helpful

Method
 

  1. Muddle watermelon in glass.
  2. Add mint leaves and lime juice.
  3. Lightly muddle lime and mint together.
  4. Pour in rum and optional simple syrup.
  5. Fill glass with crushed ice.
  6. Top with sparkling water and stir lightly.
  7. Garnish with mint and watermelon wedge.
  8. Serve immediately with a straw.
