- Gently wash and pat dry fresh mint leaves. Remove thick stems and count 8–10 leaves per drink.
- Add mint, lime wedges, and sugar/syrup to a tall glass. Muddle gently with a wooden spoon.
- Fill glass with crushed ice, pour in lime juice, and top slowly with sparkling water.
- Add mint sprig and lime wheel. Insert a straw and serve immediately while fizzy.
