Ingredients
  

  • ½ cup butter Melted
  • 1 cup sugar Granulated
  • 2 eggs Large
  • ½ cup cocoa powder Dutch-processed
  • ½ cup flour All-purpose
  • ¼ cup espresso Strong, hot
  • 8 oz mascarpone Cold
  • 1 cup heavy cream Cold
  • ½ cup powdered sugar For topping
  • 2 tablespoon cocoa powder For dusting

Method
 

  1. Bake brownies at 350°F for 20-25 minutes. While warm, poke holes and brush with espresso/liqueur mixture.
  2. Cool brownies completely in the pan.
  3. Whip heavy cream and powdered sugar. Fold in mascarpone cheese until smooth and stiff.
  4. Spread cream over cooled brownies. Chill for 2 hours.
  5. Dust with cocoa powder and slice into squares.

Notes

Allow the brownies to cool completely before adding the cream topping to prevent melting. Use the hot knife method for clean slices.
