Ingredients

Sugar Cookie Crust

  • 1 cup Butter - Softened
  • 1 cup Granulated sugar -
  • 1 large Egg - Room temperature
  • 2 teaspoon Vanilla extract -
  • cups All-purpose flour -
  • 0.5 teaspoon Baking powder -
  • 0.25 teaspoon Salt -
  • 0.5 cup Christmas sprinkles - Jimmies or nonpareils

Cheesecake Filling

  • 24 oz Cream cheese - Softened
  • 1 cup Granulated sugar -
  • 3 large Eggs - Room temperature
  • 1 cup Sour cream - Full fat
  • 2 teaspoon Vanilla extract -
  • 0.25 teaspoon Salt -

Optional Topping

  • Extra sprinkles - For garnish
  • Whipped cream - Optional
  • Mini sugar cookies - Optional

Instructions 

  • Add sprinkles or whipped cream before serving.
  • Press Dough – Press cookie dough evenly into bottom of greased springform pan; chill.
  • Mix Filling – Beat cream cheese smooth, add sugar, eggs, sour cream, vanilla, and salt.
  • Assemble – Pour cheesecake filling over cookie crust and smooth top.
  • Water Bath – Wrap pan in foil and place in roasting pan with hot water halfway up sides.
  • Bake – Bake at 325°F until edges are set and center slightly jiggles.
  • Cool Slowly – Turn oven off, crack door, cool 1 hour inside oven.
  • Chill – Cool completely, then refrigerate at least 4 hours or overnight.
  • Decorate – Add sprinkles or whipped cream before serving.
