Ingredients
  

Sugar Cookie Crust
  • 1 cup Butter Softened
  • 1 cup Granulated sugar
  • 1 large Egg Room temperature
  • 2 teaspoon Vanilla extract
  • cups All-purpose flour
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Christmas sprinkles Jimmies or nonpareils
Cheesecake Filling
  • 24 oz Cream cheese Softened
  • 1 cup Granulated sugar
  • 3 large Eggs Room temperature
  • 1 cup Sour cream Full fat
  • 2 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
Optional Topping
  • Extra sprinkles For garnish
  • Whipped cream Optional
  • Mini sugar cookies Optional

Equipment

  • 1 Springform pan 9-inch
  • 1 Electric mixer Hand or stand
  • 2 Mixing bowls Medium and large
  • 1 Spatula For smoothing
  • 1 Roasting pan For water bath
  • 1 Aluminum foil Wrap pan
  • 1 Measuring set Cups & spoons

Method
 

  1. Add sprinkles or whipped cream before serving.
  2. Press Dough – Press cookie dough evenly into bottom of greased springform pan; chill.
  3. Mix Filling – Beat cream cheese smooth, add sugar, eggs, sour cream, vanilla, and salt.
  4. Assemble – Pour cheesecake filling over cookie crust and smooth top.
  5. Water Bath – Wrap pan in foil and place in roasting pan with hot water halfway up sides.
  6. Bake – Bake at 325°F until edges are set and center slightly jiggles.
  7. Cool Slowly – Turn oven off, crack door, cool 1 hour inside oven.
  8. Chill – Cool completely, then refrigerate at least 4 hours or overnight.
  9. Decorate – Add sprinkles or whipped cream before serving.
