Ingredients
  

  • 2 cups All-purpose flour
  • 2 teaspoon Baking powder Make sure it’s fresh
  • ½ teaspoon Salt
  • 2 tablespoon Sugar For batter
  • 2 Eggs Separated
  • 1 ¾ cups Buttermilk Room temperature preferred
  • ¼ cup Unsalted butter Melted
  • 1 teaspoon Vanilla extract Pure vanilla for best flavor
  • 1 ½ cups Strawberries Hulled and diced
  • 2 tablespoon Sugar For macerating the strawberries
  • 1 teaspoon Lemon juice Optional, for brightening flavor

Method
 

  1. Hull and dice strawberries. Toss with 2 tablespoon sugar and lemon juice. Let sit for 15 minutes.
  2. Whisk flour, baking powder, salt, and sugar. In another bowl, mix egg yolks, buttermilk, vanilla, and butter. Combine wet and dry.
