  • 2 Mixing bowls (One for dry, one for wet ingredients)
  • 1 Electric mixer (For beating egg whites to soft peaks)
  • 1 Rubber spatula (Ideal for gently folding batter)
  • 1 Sharp knife (For hulling and dicing strawberries)

Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoon Baking powder - Make sure it’s fresh
  • ½ teaspoon Salt
  • 2 tablespoon Sugar - For batter
  • 2 Eggs - Separated
  • 1 ¾ cups Buttermilk - Room temperature preferred
  • ¼ cup Unsalted butter - Melted
  • 1 teaspoon Vanilla extract - Pure vanilla for best flavor
  • 1 ½ cups Strawberries - Hulled and diced
  • 2 tablespoon Sugar - For macerating the strawberries
  • 1 teaspoon Lemon juice - Optional, for brightening flavor

Instructions 

  • Hull and dice strawberries. Toss with 2 tablespoon sugar and lemon juice. Let sit for 15 minutes.
  • Whisk flour, baking powder, salt, and sugar. In another bowl, mix egg yolks, buttermilk, vanilla, and butter. Combine wet and dry.

  • Beat egg whites to soft peaks. Gently fold into batter, then fold in the macerated strawberries.
