- Hull and quarter the strawberries.
- Combine berries, lemon juice, and sugar in a food processor.
- Blend until smooth, then strain if desired.
- Stir in water, corn syrup, salt, vanilla, zest, and vodka.
- Chill mixture in fridge for 2 hours.
- Pour into shallow dish and freeze for 45 minutes.
- Stir vigorously with fork; repeat every 30 mins for 3 hours.
- Final freeze for 2 more hours until scoopable.
- Let sit 5–10 mins before scooping. Garnish and serve.
Notes
Optional ingredients like basil, vodka, or lime zest add interesting twists to this summer delight. For ultra-smooth texture, strain the purée and don’t skip stirring during freezing.
