Ingredients

  • 2 cups all purpose flour forms the crumb
  • 1 cup granulated sugar adds sweetness
  • ½ cup unsalted butter softened
  • 2 large eggs room temperature
  • 2 teaspoons baking powder for rise
  • ½ teaspoon salt enhances flavor
  • ¾ cup milk adds moisture
  • ½ cup fresh mango puree for tropical flavor
  • ½ cup fresh strawberry puree for berry tartness
  • 2 tablespoons fresh lime juice and zest for margarita tang

Equipment

  • 1 Muffin tin Standard size
  • 1 Electric mixer For fluffiness
  • 2 Mixing bowls For ingredients
  • 2 Piping bags For dual frosting

Method

  1. Combine flour, baking powder, and salt in a bowl to ensure an even distribution before mixing.
  2. Beat softened butter and sugar together until light and fluffy to build a proper cake base.
  3. Add eggs one at a time while mixing continuously to create a stable batter structure.
  4. Alternate adding dry ingredients and milk until smooth so the batter remains tender.
  5. Spoon the prepared batter evenly into a lined muffin tin for uniform baking.
  6. Bake at 350 degrees Fahrenheit until the edges turn golden and centers spring back.
  7. Transfer to a wire rack to cool completely before applying any buttercream frosting.
  8. Pipe dual flavored frostings and garnish with fresh fruit and lime slices.

Notes

Ensure purees are well strained to keep the buttercream thick and stable for piping.
