- Beat the softened butter and sugar in a large bowl until the mixture is light and aerated.
- Mix in the egg, extracts, and pink coloring until the dough reaches a uniform vibrant color.
- Stir the flour, baking soda, and salt into the creamed mixture until a soft dough forms.
- Roll tablespoon-sized portions of dough into smooth balls using the palms of your hands.
- Toss each ball in a bowl of extra sugar until the surface is completely sparkling.
- Bake on a lined sheet at 350°F for 10 minutes until the edges are just set.
- Press a chocolate kiss into each cookie immediately after removing them from the oven.
- Move the cookies to a wire rack to cool completely so the chocolate sets firm.
Notes
Freeze the chocolate kisses for 10 minutes before use to prevent them from melting too quickly when pressed into the hot cookies. Use gel food coloring for the most vibrant pink hue.
