Method
 

  1. Cook rice according to package directions with butter and salt until fluffy.
  2. Coat sliced steak with cumin, chili powder, paprika, salt, and pepper evenly.
  3. Cook seasoned steak in hot skillet for 2-3 minutes per side until browned.
  4. Remove cooked steak to plate and tent with foil to keep warm.
  5. Cook diced onions and garlic in same pan until softened and fragrant.
  6. Add milk gradually, then whisk in cheeses until smooth and creamy.
  7. Spoon rice into bowls, top with steak, and pour queso over everything.
  8. Top with fresh cilantro and serve immediately with lime wedges on side.
