Starbucks Egg Bites

These homemade Starbucks egg bites are creamy, fluffy, and high in protein; made with blended cottage cheese for that signature sous vide texture, all without special equipment.

Ingredients
  

For the Egg Base
  • 8 large Eggs Room temperature for easier blending
  • 1 cup Cottage cheese Full fat for creamy texture
  • 1 cup Gruyere cheese Shredded
  • ¼ teaspoon Salt Adjust to taste
  • ¼ teaspoon Black pepper Freshly ground
  • 1 pinch Garlic powder Optional for flavor
Bacon Gruyere Version
  • 6 strips Bacon Cooked and crumbled
  • ¼ cup Gruyere cheese Extra for topping
  • 2 tablespoons Green onions Chopped for garnish
Egg White Red Pepper Version
  • 12 large Egg whites Replaces whole eggs
  • ½ cup Roasted red peppers Diced
  • ½ cup Fresh spinach Chopped
  • ½ cup Feta cheese Crumbled

Equipment

  • 1 Blender For blending cottage cheese until smooth
  • 1 Muffin tin or silicone mold For baking egg bites evenly
  • 1 Large roasting pan To create a water bath in oven
  • 1 Measuring cups For accurate ingredient ratios
  • 1 Mixing bowl For combining ingredients
  • 1 Nonstick cooking spray To prevent sticking

Method
 

  1. Blend cottage cheese until smooth.
  2. Pulse eggs, cheese, salt, and pepper.
  3. Grease muffin tin or silicone molds.
  4. Add egg mixture three-quarters full.
  5. Add bacon or vegetables.
  6. Place tin in roasting pan, add hot water.
  7. Bake at 300°F for 30 minutes.
  8. Rest 5 minutes before removing.
