For the Jalapeños
  • 12 large Jalapeño peppers Halved lengthwise and seeded
  • 8 oz Cream cheese Softened to room temperature
  • 1 cup Cheddar cheese Shredded, preferably sharp
  • 2 cloves Garlic Minced
  • ¼ cup Green onions Chopped
  • ½ teaspoon Onion powder For flavor
  • Salt and pepper To taste
For the Shrimp
  • 24 large Shrimp Peeled and deveined (16/20 count)
  • 2 tablespoon Olive oil For searing
  • 1 teaspoon Cajun seasoning Adds smoky spice
  • ½ teaspoon Smoked paprika For depth and color
  • ¼ teaspoon Black pepper To season shrimp
  • 1 whole Lime Juiced over shrimp
For Garnish
  • 1 tablespoon Cilantro or parsley Chopped
  • Parmesan cheese Optional sprinkle
  • Lime wedges For serving

Method
 

  1. Halve and deseed jalapeños.
  2. Combine cream cheese, cheddar, garlic, and onions.
  3. Spoon mixture into pepper halves.
  4. Bake 15 minutes at 375°F until set.
  5. Toss shrimp with oil, Cajun seasoning, and lime.
  6. Cook 2 minutes per side in skillet.
  7. Top each pepper with one shrimp.
  8. Sprinkle herbs and Parmesan before serving.
