Ingredients

For the Jalapeños

  • 12 large Jalapeño peppers - Halved lengthwise and seeded
  • 8 oz Cream cheese - Softened to room temperature
  • 1 cup Cheddar cheese - Shredded, preferably sharp
  • 2 cloves Garlic - Minced
  • ¼ cup Green onions - Chopped
  • ½ teaspoon Onion powder - For flavor
  • Salt and pepper - To taste

For the Shrimp

  • 24 large Shrimp - Peeled and deveined (16/20 count)
  • 2 tablespoon Olive oil - For searing
  • 1 teaspoon Cajun seasoning - Adds smoky spice
  • ½ teaspoon Smoked paprika - For depth and color
  • ¼ teaspoon Black pepper - To season shrimp
  • 1 whole Lime - Juiced over shrimp

For Garnish

  • 1 tablespoon Cilantro or parsley - Chopped
  • Parmesan cheese - Optional sprinkle
  • Lime wedges - For serving

Instructions 

  • Halve and deseed jalapeños.
  • Combine cream cheese, cheddar, garlic, and onions.
  • Spoon mixture into pepper halves.
  • Bake 15 minutes at 375°F until set.
  • Toss shrimp with oil, Cajun seasoning, and lime.
  • Cook 2 minutes per side in skillet.
  • Top each pepper with one shrimp.
  • Sprinkle herbs and Parmesan before serving.
