  • 4 large sweet apples Peeled, cored, and chopped, plus extra sliced for garnish
  • 3 large carrots Peeled and chopped
  • 1 large yellow onion Finely diced
  • 2 tablespoon olive oil For sautéing
  • 4 cups vegetable broth Low sodium
  • ½ teaspoon red chili flakes Adjust to desired heat level
  • 1 tablespoon fresh thyme Plus sprigs for garnish
  • 2 tablespoon chili oil For drizzling

Method
 

  1. Heat olive oil in a large pot and sauté the onions and carrots until soft to build the savory vegetable foundation.
  2. Stir the chili flakes and fresh thyme into the hot vegetables to toast the spices so they release their aromas.
  3. Add the chopped apples and vegetable broth to the pot, bringing it to a gentle boil to begin softening the fruit.
  4. Simmer the soup covered on low heat for twenty minutes to ensure all the ingredients are completely tender.
  5. Remove the pot from the heat and use an immersion blender to puree the soup until it is completely smooth and velvety.
  6. Ladle the hot, pureed soup into wide serving bowls to prepare the dish for its beautiful garnishes.
  7. Float three thin slices of fresh apple directly on top of each bowl so they sit nicely on the thick puree.
  8. Drizzle a generous swirl of chili oil and add a sprig of fresh thyme before serving immediately so it looks stunning.

Notes
