Add flours, salt, and butter. Stir until combined.
Cover and rest for 30 minutes.
Stretch and fold dough 3–4 times over 2 hours.
Cover bowl and refrigerate overnight.
Remove from fridge, divide and shape into logs.
Place dough in greased pans seam-side down.
Let rise 2–4 hours until 1" above rim.
Preheat oven to 375°F.
Brush tops with egg wash and oats if desired.
Bake 35–40 minutes until golden and 200–205°F inside.
Remove from pans, cool on rack, and slice when fully cooled.
