- Preheat smoker to 225°F. Mix beef, pork, crumbs, egg, and spices in a bowl.
- Form meat patties, place a cheese cube in the center, and seal tightly into a ball.
- Smoke meatballs directly on the grate for 45-60 minutes.
- Increase heat to 350°F. Brush meatballs with BBQ sauce and cook 10 more minutes until 165°F internal.
- Remove from grill, garnish with chives, and serve hot.
Notes
Ensure the meat is sealed tightly around the cheese to prevent leaks. Use block mozzarella for the best melting consistency without disappearing into the meat.
