  • 8 oz lemon-lime soda Chilled completely
  • 2 tablespoon grenadine syrup For the cherry base
  • 2 tablespoon coconut cream Chilled and whisked smooth
  • 1 tablespoon lime juice Freshly squeezed
  • 2 pieces maraschino cherries For garnish
  • 1 slice fresh lime For garnish
  • ice cubes For serving

Method
 

  1. Fill a tall serving glass completely to the top with cold ice cubes to ensure the beverage remains incredibly frosty.
  2. Pour the bright red grenadine syrup directly over the ice to build the base so the sweet cherry layer settles.
  3. Squeeze fresh lime juice into the glass to add a tart bite so it cuts through the intense sweetness.
  4. Pour the chilled lemon-lime soda slowly into the glass to create the fizz so the pink bubbles rise beautifully.
  5. Whisk the coconut cream slightly in a small bowl to smooth the texture so it pours flawlessly over the drink.
  6. Pour the cream very slowly over the top of the soda to create the swirl so the layers look distinctly separate.
  7. Drop two bright red cherries directly onto the thick foam layer to garnish the top so it looks nostalgic.
  8. Slide a fresh lime wedge onto the rim of the glass to finish the presentation so it is ready to serve.

Notes

Pour the chilled coconut cream very slowly over the back of a spoon onto the top of the ice so it cascades beautifully into the pink soda without curdling.
