  • 32 oz Whole milk ricotta cheese Well drained overnight for best texture
  • 8 oz Cream cheese Softened
  • 8 oz Mascarpone cheese Adds rich creaminess
  • 1 ½ cups Powdered sugar For sweetness
  • 2 teaspoon Vanilla extract Classic flavor
  • 1 teaspoon Almond extract Optional but enhances taste
  • 1 pinch Salt Balances sweetness
  • 1 cup Mini chocolate chips Folded into filling
  • ½ cup Pistachios Chopped, optional
  • 2 boxes Graham crackers 14.4 oz each, for layering
  • ¼ cup Butter Melted, for brushing layers
  • Powdered sugar For dusting top
  • Candied orange peel Optional garnish

Equipment

Method
 

  1. Place ricotta in strainer and refrigerate overnight.
  2. Mix ricotta, mascarpone, and cream cheese until smooth.
  3. Blend in powdered sugar, vanilla, almond extract, and salt.
  4. Gently mix in chocolate chips and pistachios.
  5. Brush bottom of pan lightly with melted butter.
  6. Arrange graham crackers evenly to cover the bottom.
  7. Spread half of ricotta mixture evenly over graham layer.
  8. Add another graham layer and remaining filling.
  9. Finish with final graham cracker layer; press gently.
  10. Cover with plastic wrap and refrigerate 8 hours or overnight.
  11. Dust with powdered sugar and garnish before slicing.
