Raspberry Peach Iced Tea

Ingredients
  

  • 8 cups water Divided for brewing
  • 6 pieces black tea bags Or 6 teaspoon loose leaf tea
  • ¼ cup honey Or sugar to taste
  • 2 tablespoons fresh lemon juice For brightness
  • 1 cup fresh raspberries Divided for muddling
  • 2 large ripe peaches Sliced for infusion
  • 4 sprigs fresh rosemary Or mint for garnish
  • 2 cups ice cubes For serving
  • ½ cup extra raspberries For garnish
  • 1 piece extra peach Sliced for garnish

Equipment

  • Large pitcher or jar For brewing and serving tea
  • Fine-mesh strainer For removing tea particles
  • Muddler or wooden spoon For crushing raspberries
  • Tall glasses For beautiful presentation
  • Sharp knife For slicing peaches

Method
 

  1. Bring 4 cups water to boil, remove from heat
  2. Steep tea bags 5-7 minutes for strong flavor
  3. Remove bags, stir in honey while tea is hot
  4. Add 4 cups cold water and lemon juice, cool completely
  5. Gently crush half the raspberries to release juices
  6. Add muddled and whole raspberries plus peach slices
  7. Include fresh rosemary sprigs for aromatic complexity
  8. Refrigerate 2+ hours for best flavor development
  9. Pour over ice with fruit pieces and fresh herb garnish

Notes

Use mint instead of rosemary for a different herbal twist. You can also adjust sweetness to taste with more or less honey or sugar.
