Ingredients
  

  • 2 ½ cups All-purpose flour Sifted
  • 2 tablespoon Unsweetened cocoa powder
  • 1 ½ cups Sugar Granulated
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 2 large Eggs Room temperature
  • 1 ¼ cups Buttermilk
  • 1 cup Vegetable oil Neutral like canola
  • 2 teaspoon Pure vanilla extract Clear for vibrant color
  • 3 drops Blueberry extract Optional for added depth
  • 1 tablespoon White vinegar
  • 1 teaspoon Purple gel food coloring Adjust for desired color
Frosting Ingredients
  • 8 oz Cream cheese Softened
  • ½ cup Unsalted butter Softened
  • 4 cups Powdered sugar Sifted
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Equipment

  • 2 8- or 9-inch cake pans Grease and line with parchment
  • 1 Large mixing bowl
  • 1 Stand or hand mixer
  • 1 Wire cooling rack
  • 1 Spatula For folding batter

Method
 

Prep
  1. Preheat oven to 350°F (175°C). Grease and line two 8- or 9-inch round cake pans with parchment paper.
Mix Dry
  1. Whisk together flour, cocoa powder, baking soda, and salt in a bowl.
Mix Wet
  1. Beat sugar and oil until smooth, then mix in eggs, vanilla, and purple gel food coloring. 5 minutes
  2. Combine Alternate adding dry ingredients and buttermilk to the wet mixture, mixing until just combined.
Bake
  1. Divide batter into pans, tap to remove air bubbles, and bake for 25-28 minutes. 25 minutes
Frost
  1. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla; frost cooled cake layers.
