Ingredients
  

  • 4 slices thick sourdough or white bread Sturdy bread works best
  • 3 tablespoon salted butter Softened for spreading
  • ½ teaspoon garlic powder For the crust
  • ½ teaspoon dried oregano For the crust
  • 1 cup mozzarella cheese Shredded, low moisture
  • 4 slices provolone cheese Adds flavor depth
  • 12 slices pepperoni Regular or turkey
  • 2 tablespoon pizza sauce Thick marinara
  • 1 teaspoon fresh thyme For garnish

Equipment

  • 1 Skillet Cast iron preferred
  • 1 Spatula For flipping

Method
 

  1. Mix softened butter with garlic powder and dried oregano in a small bowl.
  2. Spread the garlic butter generously on one side of each bread slice.
  3. Layer provolone, pepperoni, sauce, and mozzarella between bread slices (butter side out).
  4. Cook in a skillet over medium-low heat for 3-4 minutes per side until golden.
  5. Sprinkle with fresh thyme and flaky salt before slicing.

Notes

Use low-moisture mozzarella to prevent soggy bread. Serve with extra marinara for dipping.
