Method
 

  1. Combine melted butter, sugars, and pudding mix until smooth.
  2. Whisk in eggs and vanilla until glossy.
  3. Add flour, baking soda, and salt; mix until dough forms.
  4. Fold in white chocolate chips and pistachios.
  5. Cover and refrigerate 30 minutes for thicker cookies.
  6. Scoop into balls and roll in sugar if desired.
  7. Bake at 350°F for 10–12 minutes until edges are set.
  8. Let cookies cool 5 minutes before transferring to rack.
