Ingredients
  

  • 2 cups frozen pineapple chunks For the yellow layer
  • 2 cups frozen strawberries For the red layer
  • 1 cup apple juice Divided for blending
  • 2 tablespoon honey Adjust to taste

Method
 

  1. Place the frozen pineapple chunks into the blender to build the base so the yellow layer forms.
  2. Pour half the juice and honey over the fruit to add moisture so the blades catch easily.
  3. Pulse the machine until the mixture is thick to create the slush so the texture becomes icy.
  4. Transfer the yellow slush to a bowl and rinse the pitcher to prepare it so colors stay separate.
  5. Toss the frozen strawberries into the clean blender to start the next layer so the red base forms.
  6. Blend the berries with remaining juice until thick to finish the purees so both colors are ready.
  7. Spoon alternating layers of yellow and red into glasses to build the drink so a striped pattern emerges.
  8. Garnish with fresh strawberries and mint before serving to decorate the cups so they look perfectly tropical.

Notes

Add the apple juice very slowly while blending to ensure the fruit purees remain incredibly thick so the layers do not instantly mix together in the glass.
