Ingredients

  • 3 cups all-purpose flour
  • 3 cups granulated sugar
  • 1 cup butter - Softened
  • 5 large eggs
  • 1 cup pineapple juice
  • ½ cup whole milk
  • 1 ½ teaspoons vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups powdered sugar - For glaze
  • ½ cup pineapple juice - For glaze
  • ¼ cup butter - Melted, for glaze
  • 1 teaspoon vanilla extract - For glaze
  • fresh pineapple chunks - For garnish

Instructions 

  • Preheat oven 350°F, grease and flour cake pan thoroughly
  • Butter and sugar until light and fluffy, about 5 minutes
  • Eggs one at a time, then vanilla extract until combined
  • Flour mixture and pineapple juice alternately, begin and end with flour
  • Pour into prepared pan, bake 65-75 minutes until golden
  • In pan 15 minutes, then turn out onto wire rack completely
  • Whisk powdered sugar, pineapple juice, butter, vanilla until smooth
  • Pour glaze over cooled cake, garnish with fresh pineapple chunks

Notes

This cake is perfect for tropical celebrations or summer gatherings. The glaze adds extra sweetness and a stunning finish. Adjust garnish to preference.
