  • 1 cup pineapple juice
  • ½ cup whole milk
  • 1 ½ teaspoons vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups powdered sugar For glaze
  • ½ cup pineapple juice For glaze

Method
 

  1. Preheat oven 350°F, grease and flour cake pan thoroughly
  2. Butter and sugar until light and fluffy, about 5 minutes
  3. Eggs one at a time, then vanilla extract until combined
  4. Flour mixture and pineapple juice alternately, begin and end with flour
  5. Pour into prepared pan, bake 65-75 minutes until golden
  6. In pan 15 minutes, then turn out onto wire rack completely
  7. Whisk powdered sugar, pineapple juice, butter, vanilla until smooth
  8. Pour glaze over cooled cake, garnish with fresh pineapple chunks
