  • ¾ cup Brown Sugar For the pecan filling
  • 1 ½ cups Chopped Pecans For the pecan filling
  • 2 Eggs For the pecan filling
  • ¼ cup Butter Melted for the filling
  • 1 teaspoon Vanilla Extract For the filling
  • ¼ teaspoon Salt For the filling
  • ¼ cup Corn Syrup Light For the filling

Equipment

  • 1 Mini Muffin Tin24-cup tin preferred
  • 1 Electric mixer Stand or hand mixer
  • 1 Small Cookie Scoop 1 tablespoon size
  • 1 Cooling rack For cooling tassies after baking
  • 1 Measuring cups/spoons For accuracy in ingredient amounts

Method
 

  1. Preheat the oven to 350°F.
  2. Prepare the pastry by mixing cream cheese, butter, flour, and salt until combined.
  3. Chill the dough in the fridge for 1 hour.
  4. Form the dough into small balls and press into mini muffin tins.
  5. Mix the filling by whisking together eggs, brown sugar, melted butter, vanilla, salt, and corn syrup.
  6. Fill the dough cups with the pecan filling, about ⅔ full.
  7. Bake at 350°F for 20-25 minutes, until the edges are golden and the filling is set.
  8. Cool the pecan tassies on a wire rack for 10 minutes before serving
