Ingredients
  

Peanut Butter Cookie Dough
  • 1 cup creamy peanut butter Not natural
  • ½ cup butter Softened
  • ¾ cup brown sugar Packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
Brownie Swirl Batter
  • ½ cup semi-sweet chocolate chips
  • 2 tablespoon butter
  • ¼ cup granulated sugar
  • 1 large egg
  • ¼ cup all-purpose flour
  • 2 tablespoon cocoa powder
  • 1 pinch salt
Optional Add-ins
  • ½ cup mini PB cups or extra chocolate chips Optional
  • 1 pinch flaky sea salt For topping

Equipment

  • 1 Cookie Scoop For evenly sized cookies
  • 1 Mixing bowl Large

  • 1 Microwave-safe bowl For melting chocolate

Method
 

  1. Cream butter & peanut butter. Add sugars, egg, vanilla. Mix in flour, baking soda, salt until dough forms.
  2. Melt chocolate & butter. Whisk in sugar, egg, flour, cocoa, and salt to form thick batter.
  3. Scoop dough balls onto sheet and chill 15 minutes.
  4. Dollop brownie batter over each dough ball; swirl with toothpick in circular motion.
  5. Bake at 350°F for 11–13 minutes until edges set and centers appear soft.
  6. Cool 5 minutes on sheet, then transfer to rack.

Notes

You can customize the swirl with other add-ins like caramel or white chocolate. Don't overbake; centers should look slightly underdone when removed from the oven.
