  • 1 lb fresh green beans Washed, completely dried, and ends trimmed
  • 2 tablespoon olive oil Extra virgin preferred
  • 3 cloves fresh garlic Minced finely
  • ½ teaspoon kosher salt Plus extra to taste
  • ¼ teaspoon black pepper Freshly cracked
  • cup parmesan cheese Finely grated, for tossing after baking
  • 2 tablespoon fresh parsley Finely chopped, for garnish

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit to ensure the cooking environment is hot enough to blister the vegetables.
  2. Place the thoroughly dried and trimmed green beans directly onto a large, rimmed baking sheet.
  3. Drizzle the olive oil over the beans and sprinkle with minced garlic, kosher salt, and cracked black pepper.
  4. Toss the beans vigorously with your hands until they are evenly coated, then spread them into a single flat layer.
  5. Roast in the hot oven for 10 to 12 minutes, tossing halfway through, until they are tender-crisp and slightly charred.
  6. Remove the pan from the oven and immediately sprinkle the hot green beans heavily with the grated parmesan cheese.
  7. Toss the beans gently on the pan so the cheese melts slightly, then transfer them to a rustic serving bowl.
  8. Garnish the cheesy green beans with freshly chopped parsley and serve immediately while piping hot.

Notes

Ensure your washed green beans are completely bone-dry before tossing them in olive oil; any residual water will cause them to steam in the oven instead of roasting and blistering.
