Instructions
Wash oranges and peel strips of zest avoiding white pith
Break cinnamon sticks into smaller pieces for better extraction
Add water to saucepan and bring to medium heat
Add orange peels, cinnamon pieces and optional spices to water
Bring to gentle simmer then reduce heat to low
Let simmer 15-20 minutes for full flavor development
Remove solids using fine-mesh strainer or leave for rustic style
Add honey while hot and stir until dissolved
Pour into mugs and garnish with orange slices if desired
