One Pot Cajun Chicken Alfredo Orzo

Ingredients
  

  • 1 lb Chicken breast Cubed
  • 1 ½ cups Orzo pasta Dry
  • 2 tablespoon Cajun seasoning Divided
  • 1 red Bell pepper Diced
  • 3 cups Chicken broth Low sodium
  • ¾ cup Heavy cream Richness
  • ½ cup Parmesan cheese Grated
  • 1 small Onion Diced
  • 3 cloves Garlic Minced
  • 1 tablespoon Butter Unsalted

Equipment

  • 1 Large skillet Deep with lid
  • 1 Chef's knife For chopping
  • 1 Wooden spoon For stirring

Method
 

  1. Toss chicken cubes with 1 tablespoon Cajun seasoning.
  2. Sear chicken in olive oil until golden; remove from pan.
  3. Melt butter; sauté onion, pepper, garlic, and orzo with remaining spice.
  4. Add broth, bring to boil, cover and simmer 10-12 mins.
  5. Stir in cream and parmesan until sauce forms.
  6. Return chicken to pan, heat through, and garnish with parsley.

Notes

Sear the chicken in batches to get a good crust. Add a splash of water when reheating to restore creaminess.
