- Toss chicken cubes with 1 tablespoon Cajun seasoning.
- Sear chicken in olive oil until golden; remove from pan.
- Melt butter; sauté onion, pepper, garlic, and orzo with remaining spice.
- Add broth, bring to boil, cover and simmer 10-12 mins.
- Stir in cream and parmesan until sauce forms.
- Return chicken to pan, heat through, and garnish with parsley.
Notes
Sear the chicken in batches to get a good crust. Add a splash of water when reheating to restore creaminess.
