  • 2 Mixing bowls (For peaches and cream separately)
  • 1 Hand mixer (Or stand mixer for whipping cream)

  • 1 Serrated knife (For slicing pound cake evenly)

Ingredients

  • 1 loaf Pound cake - Cut into cubes, air-dried
  • 5 Fresh peaches - Peeled and sliced
  • 2 tablespoon Sugar - For macerating peaches
  • 1 tablespoon Lemon juice - Freshly squeezed
  • 1 teaspoon Vanilla extract - Added to peaches
  • 1.5 cups Heavy whipping cream - Whipped to soft peaks
  • 3 tablespoon Powdered sugar - Sweetens the whipped cream
  • 1 box Instant vanilla pudding - Prepared as directed
  • 4 oz Cream cheese - Softened, folded into cream layer
  • cup Toasted pecans - Rough chopped for topping

Instructions 

  • Peel and slice peaches evenly. Toss with sugar and lemon juice, let sit for 20 minutes to macerate, then stir in vanilla extract.

  • Whip heavy cream with powdered sugar to soft peaks. Prepare vanilla pudding and fold it together with cream cheese and whipped cream.

  • Cut pound cake into bite-sized cubes and spread on a baking sheet to air dry for better texture.

  • In a glass bowl, layer cake, peaches with juices, and cream. Repeat layers, then finish with cream, peach slices, and pecans. Chill 2+ hours.
