- Peel and slice peaches evenly. Toss with sugar and lemon juice, let sit for 20 minutes to macerate, then stir in vanilla extract.
- Whip heavy cream with powdered sugar to soft peaks. Prepare vanilla pudding and fold it together with cream cheese and whipped cream.
- Cut pound cake into bite-sized cubes and spread on a baking sheet to air dry for better texture.
- In a glass bowl, layer cake, peaches with juices, and cream. Repeat layers, then finish with cream, peach slices, and pecans. Chill 2+ hours.
