- In a large skillet, melt butter over medium heat until foaming.
- Add diced apples, brown sugar, cinnamon, and nutmeg. Cook 8–10 minutes, stirring until tender but not mushy.
- Stir in lemon juice, remove from heat, and let apples cool completely.
- Whisk pudding mix with cold milk for 2 minutes. Let stand 5 minutes to thicken.
- Gently fold in Cool Whip and vanilla until smooth. Chill pudding mixture.
- In 9x13 dish, layer graham crackers, half pudding, half apples, and caramel drizzle. Repeat layers.
- Top with final graham cracker layer, drizzle with caramel, cover, and refrigerate at least 4
