Ingredients
  

Crust
  • 2 cups Biscoff cookies crushed — about 20 cookies
  • ¼ cup butter melted
  • 2 tablespoon brown sugar
  • 1 pinch salt
Filling
  • 16 oz cream cheese softened — 2 packages
  • ½ cup Biscoff cookie butter spread
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream cold
  • 2 tablespoon powdered sugar for whipping cream
Topping
  • whipped cream
  • extra Biscoff cookies
  • caramel sauce
  • cookie crumbs

Equipment

  • 1 Electric mixer hand or stand
  • 1 Food processor or zip bag + rolling pin for crumbs
  • 1 Mixing bowl large — cream cheese filling
  • 1 Mixing bowl medium — whipped cream
  • 1 Spatula for folding
  • 8 Small jars/cups 6–8 oz, for serving
  • 1 Piping bag or zip bag optional, for cleaner layering

Method
 

  1. Add whipped cream, caramel, crumbs, and a cookie right before serving.
  2. Mix Crust: Stir crumbs with melted butter, brown sugar, and salt until it looks like wet sand.
  3. Pack Layer: Press crust into the bottom of jars; chill while you make filling.
  4. Beat Smooth: Beat cream cheese until completely smooth. Mix in cookie butter, powdered sugar, and vanilla.
  5. Whip Cream: Whip cold heavy cream + powdered sugar to stiff peaks.
  6. Fold Gently: Fold whipped cream into the cream cheese mixture until fluffy.
  7. Fill Jars: Pipe or spoon filling over crust; smooth tops.
  8. Chill Set: Cover and refrigerate at least 4 hours (overnight is best).
  9. Top Serve: Add whipped cream, caramel, crumbs, and a cookie right before serving.
