Ingredients

  • 4 cups vegetable broth Low sodium preferred
  • 1 tablespoon fresh ginger Finely grated
  • 1 teaspoon soy sauce or tamari For added depth
  • 3 tablespoon white miso paste Do not boil
  • 1 half fresh lemon Sliced thinly into wheels
  • 2 stalks green onions Chopped
  • 1 tablespoon fresh cilantro Roughly chopped
  • 1 teaspoon sesame seeds Toasted for garnish
  • ½ teaspoon red pepper flakes Adjust to desired heat level

Equipment

  • 1 Medium saucepan For heating the broth
  • 1 Fine grater For prepping the fresh ginger
  • 1 Whisk For dissolving the miso paste smoothly
  • 1 Ladle For serving

Method

  1. Combine the vegetable broth, grated ginger, and soy sauce in a saucepan to build the savory base.
  2. Simmer the mixture gently over medium heat for five minutes to infuse the liquid with the sharp ginger flavor.
  3. Remove the saucepan entirely from the heat to ensure the boiling liquid does not destroy the delicate miso paste.
  4. Whisk the white miso paste with a ladle of hot broth in a small bowl until completely smooth to prevent clumping.
  5. Stir the smooth miso mixture back into the main saucepan to finish the soup base beautifully.
  6. Ladle the hot, golden broth into wide serving bowls to prepare the dish for its fresh garnishes.
  7. Float the thin lemon slices directly on top of the hot broth so the gentle heat releases the bright citrus oils.
  8. Garnish the bowls generously with green onions, cilantro, sesame seeds, and red pepper flakes before serving immediately.

Notes

Always remove the broth from the heat completely before whisking in the miso paste to preserve its delicate flavor and beneficial properties.
