Ingredients
  

  • 1 box Yellow cake mix 15.25 oz
  • 2 large Eggs Room temp
  • cup Vegetable oil Canola works too
  • 1 box Instant vanilla pudding 3.4 oz
  • 1 cup Whole milk Cold
  • ½ cup Heavy cream Whipped
  • ½ cup Chocolate chips Semi-sweet
  • cup Heavy cream For ganache
  • 2 tablespoon Chocolate shavings Garnish

  • 1 Baking Sheet With parchment
  • 1 Mixer Hand or stand
  • 1 Piping bag For assembly

Method
 

  1. Mix cake mix, eggs, and oil to form a dough; roll into balls and bake at 350°F for 8-10 mins.
  2. Whisk pudding mix with milk until thick, then fold in whipped cream for the filling.
  3. Pour hot cream over chocolate chips and whisk until a smooth ganache forms.
  4. Pipe filling onto the flat side of one cookie and top with a second cookie.
  5. Spoon ganache over the top cookie and sprinkle with chocolate shavings.
  6. Refrigerate for 20 minutes to set the filling and chocolate before serving.

Notes

Ensure cookies are fully cooled before filling to prevent melting. Use a vegetable peeler on a chocolate bar to create professional-looking shavings.
