Method
- Preheat oven to 375°F and grease a mini muffin tin thoroughly.
- Cook sausage in a skillet until browned; drain grease well.
- Whisk pancake mix, water, maple syrup, and egg in a bowl until just combined.
- Fold in cooked sausage and cheese.
- Fill muffin cups and bake for 12–15 minutes until golden brown.
- Cool slightly before removing from pan and serving.
Notes
Use silicone mini muffin liners or grease your pan very well, as the syrup in the batter can make them sticky. Freeze leftovers for a quick microwave breakfast.
