Method
 

  1. Pat chicken dry and season both sides with salt and pepper.
  2. Peel and cut sweet potatoes into 1-inch cubes.
  3. Whisk maple syrup, Dijon, butter, garlic, thyme, and cinnamon.
  4. Place chicken and potatoes on baking sheet, leaving space.
  5. Brush half of the maple glaze on chicken and potatoes.
  6. Bake at 425°F for 30 minutes until chicken starts to brown.
  7. Brush with remaining glaze; roast another 10–15 minutes.
  8. Sprinkle with pecans, thyme, and sea salt before serving.
