  • 1 Food Mold (Or small bowl)
  • 1 Citrus Zester (For lime zest)
  • 1 Chef's knife (For dicing fruit)

Ingredients

  • 2 cups Jasmine rice - Cooked
  • 1 large Mango - Diced small
  • 2 tablespoon Lime juice - Freshly squeezed
  • 1 tablespoon Lime zest - Grated
  • ¼ cup Cilantro - Chopped
  • ½ teaspoon Sea salt - Fine grain
  • 1 sprig Fresh mint - For garnish

Instructions 

  • Fluff the warm jasmine rice in a large bowl to separate the grains.
  • Whisk lime juice, zest, and sea salt together in a small dish.
  • Drizzle the dressing over the rice and toss gently to coat evenly.
  • Fold in the chopped cilantro and prepare the diced mango cubes.
  • Press the rice firmly into a mold and invert onto a plate to form a mound.
  • Scatter mango cubes over the top and around the base of the rice.
  • Garnish with a fresh mint sprig at the peak and a lime wedge on the side.

Notes

Rinse the jasmine rice thoroughly before cooking to prevent stickiness. Use a mold for the professional 'mountain' look seen in the photos.
