Mango Lime Rice

Ingredients
  

  • 2 cups Jasmine rice Cooked
  • 1 large Mango Diced small
  • 2 tablespoon Lime juice Freshly squeezed
  • 1 tablespoon Lime zest Grated
  • ¼ cup Cilantro Chopped
  • ½ teaspoon Sea salt Fine grain
  • 1 sprig Fresh mint For garnish

Equipment

  • 1 Food Mold Or small bowl
  • 1 Citrus Zester For lime zest
  • 1 Chef's knife For dicing fruit

Method
 

  1. Fluff the warm jasmine rice in a large bowl to separate the grains.
  2. Whisk lime juice, zest, and sea salt together in a small dish.
  3. Drizzle the dressing over the rice and toss gently to coat evenly.
  4. Fold in the chopped cilantro and prepare the diced mango cubes.
  5. Press the rice firmly into a mold and invert onto a plate to form a mound.
  6. Scatter mango cubes over the top and around the base of the rice.
  7. Garnish with a fresh mint sprig at the peak and a lime wedge on the side.

Notes

Rinse the jasmine rice thoroughly before cooking to prevent stickiness. Use a mold for the professional 'mountain' look seen in the photos.
