  • 1 Skillet (For cooking beef)
  • 1 Chef's knife (For chopping vegetables)
  • 1 Box grater (For shredding cheese)

Ingredients

  • 28 oz frozen seasoned french fries - Extra crispy variety
  • 1 lb ground beef - 85/15 lean
  • 1 packet taco seasoning - Or homemade blend
  • 2 cups cheddar and Monterey Jack cheese - Freshly shredded
  • ½ cup canned black beans - Rinsed and drained
  • ½ cup sweet corn kernels - Canned or frozen
  • 2 fresh jalapeños - Sliced into rounds
  • 1 cup Roma tomatoes - Diced small
  • ½ red onion - Finely diced
  • ½ cup sour cream - For serving
  • ¼ cup fresh cilantro - Chopped
  • 1 lime - Cut into wedges

Instructions 

  • Bake the frozen fries on a baking sheet at 400°F for 20-25 minutes until golden and crispy.
  • Brown the ground beef in a skillet, drain grease, and simmer with taco seasoning and water.
  • Layer the beef, black beans, corn, and shredded cheese over the hot fries.
  • Return pan to oven for 2-3 minutes until cheese is completely melted and bubbly.
  • Top with jalapeños, tomatoes, onion, cilantro, and sour cream before serving.

Notes

Grate the cheese yourself from a block for the best melt; pre-shredded cheese can be oily and doesn't melt as smoothly.
