Ingredients
  

  • 28 oz frozen seasoned french fries Extra crispy variety
  • 1 lb ground beef 85/15 lean
  • 1 packet taco seasoning Or homemade blend
  • 2 cups cheddar and Monterey Jack cheese Freshly shredded
  • ½ cup canned black beans Rinsed and drained
  • ½ cup sweet corn kernels Canned or frozen
  • 2 fresh jalapeños Sliced into rounds
  • 1 cup Roma tomatoes Diced small
  • ½ red onion Finely diced
  • ½ cup sour cream For serving
  • ¼ cup fresh cilantro Chopped
  • 1 lime Cut into wedges

Equipment

  • 1 Baking Sheet Large size
  • 1 Skillet For cooking beef
  • 1 Chef's knife For chopping vegetables
  • 1 Box grater For shredding cheese

Method
 

  1. Bake the frozen fries on a baking sheet at 400°F for 20-25 minutes until golden and crispy.
  2. Brown the ground beef in a skillet, drain grease, and simmer with taco seasoning and water.
  3. Layer the beef, black beans, corn, and shredded cheese over the hot fries.
  4. Return pan to oven for 2-3 minutes until cheese is completely melted and bubbly.
  5. Top with jalapeños, tomatoes, onion, cilantro, and sour cream before serving.

Notes

Grate the cheese yourself from a block for the best melt; pre-shredded cheese can be oily and doesn't melt as smoothly.
