Ingredients

  • 32 oz Tater tots - Frozen
  • 6 large Eggs - Fried or scrambled
  • 8 slices Bacon - Cooked and crumbled
  • 1 ½ cups Cheddar cheese - Shredded
  • ¼ cup Green onions - Chopped
  • 1 teaspoon Salt - To taste
  • 1 teaspoon Black pepper - To taste

Instructions 

  • Bake or air fry tater tots at 425°F for 20-25 minutes until extra crispy.
  • Fry bacon in a skillet until crispy, then crumble.
  • Fry eggs in the bacon grease (or butter) until whites are set and yolks are runny.
  • Divide hot tots into bowls and sprinkle immediately with cheddar cheese.
  • Top with fried eggs, crumbled bacon, and green onions.
  • Serve hot immediately.

Notes

Cook the tater tots until deep golden brown to ensure they stay crispy under the toppings. Use fresh chives for a pop of color.
