Ingredients

  • 1 cup lavender syrup Store bought or homemade
  • 2 cups fresh orange juice Strained to remove pulp
  • 3 cups sparkling water Chilled completely
  • 2 large fresh oranges Sliced into thin wheels
  • 4 sprigs fresh lavender For garnish
  • ice cubes For serving

Equipment

  • 4 Tall serving glasses For layering the beverage
  • 1 Measuring cups For accurate liquid portions
  • 1 Citrus juicer For extracting fresh orange juice
  • 1 Long stirring spoon For gentle mixing

Method

  1. Set four tall serving glasses out and fill them completely with fresh ice to chill the vessels so the drink stays frosty.
  2. Slide a thin orange wheel down the inside of each glass to decorate the sides so it looks incredibly professional.
  3. Pour a quarter cup of lavender syrup directly over the solid ice to build the base so the purple layer settles.
  4. Squeeze the fresh oranges and strain the juice to remove thick pulp so the liquid remains perfectly smooth.
  5. Pour the strained orange juice gently over the purple syrup layer to stack the colors so they do not bleed.
  6. Top each layered glass carefully with chilled sparkling water to create the fizz so the beverage is refreshing.
  7. Stir the beverage very gently with a long thin metal spoon to mix slightly so the flavors combine beautifully.
  8. Tuck a fresh lavender sprig right into the top of the ice to garnish the drink so it smells wonderful.

Notes

Pour the orange juice incredibly slowly over the back of a spoon to keep the yellow and purple layers completely separated in the glass.
