Ingredients

Main Ingredients:

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsalted butter - Room temperature
  • 4 large eggs - Room temperature
  • 2 cups fresh strawberries - Or frozen
  • 1 cup buttermilk - Room temperature
  • 2 teaspoons vanilla extract
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Frosting:

  • 16 ounces cream cheese - Full-fat softened
  • 1 cup unsalted butter - Softened
  • 4 cups powdered suga
  • 2 teaspoons vanilla extract
  • teaspoon salt

Instructions 

Step 1: Berry Preparation

  • Prep Time: 20 minutes
  • Clean and hull strawberries
  • Blend until smooth
  • Reduce on stovetop
  • Cool completely

Step 2: Cake Batter

  • Prep Time: 15 minutes
  • Cream butter and sugar
  • Add eggs one at a time
  • Alternate dry ingredients and buttermilk
  • Fold in strawberry reduction

Step 3: Bake and Cool

  • Cook Time: 25 minutes
  • Pour into prepared pans
  • Bake at 350°F
  • Cool completely

Step 4: Frosting & Assembly

  • Prep Time: 15 minutes
  • Beat cream cheese and butter
  • Add powdered sugar gradually
  • Layer and frost cake
  • Decorate with fresh berries
