Equipment

  • 1 Large pot (For sautéing and simmering broth)
  • 1 Sharp knife (To prep aromatics and toppings)
  • 1 Fine-mesh strainer (Optional, to remove aromatics cleanly)
  • 1 Ladle (For neat serving)

Ingredients

  • 2 packs Instant ramen noodles - Discard seasoning packets
  • 4 cups Chicken or vegetable broth - Use low-sodium if preferred
  • 2 cloves Garlic - Minced
  • 1 inch Fresh ginger - Grated
  • 2 tablespoon Soy sauce
  • 1 tablespoon Miso paste - Optional, but adds deep flavor
  • 1 teaspoon Sesame oil - Toasted if available
  • 0.5 teaspoon Chili garlic sauce - Adjust to taste
  • 2 Soft-boiled eggs - Halved
  • 2 Green onions - Thinly sliced
  • 1 cup Spinach or bok choy - Fresh
  • 0.5 cup Sliced mushrooms - Shiitake or cremini
  • 0.25 cup Corn kernels - Fresh or frozen

Instructions 

  • Divide noodles and broth. Top with egg and garnish.
  • Cook Noodles – Add ramen to broth and cook 2–3 mins until tender.
  • Add Veggies – Add mushrooms, then spinach last minute. Stir gently.
  • Season – Add chili garlic sauce and taste for soy sauce.
  • Serve Bowls – Divide noodles and broth. Top with egg and garnish.
