Homemade Ramen Noodles

Ingredients
  

  • 2 packs Instant ramen noodles Discard seasoning packets
  • 4 cups Chicken or vegetable broth Use low-sodium if preferred
  • 2 cloves Garlic Minced
  • 1 inch Fresh ginger Grated
  • 2 tablespoon Soy sauce
  • 1 tablespoon Miso paste Optional, but adds deep flavor
  • 1 teaspoon Sesame oil Toasted if available
  • 0.5 teaspoon Chili garlic sauce Adjust to taste
  • 2 Soft-boiled eggs Halved
  • 2 Green onions Thinly sliced
  • 1 cup Spinach or bok choy Fresh
  • 0.5 cup Sliced mushrooms Shiitake or cremini
  • 0.25 cup Corn kernels Fresh or frozen

Equipment

  • 1 Large pot For sautéing and simmering broth
  • 1 Sharp knife To prep aromatics and toppings
  • 1 Fine-mesh strainer Optional, to remove aromatics cleanly
  • 1 Ladle For neat serving

Method
 

  1. Divide noodles and broth. Top with egg and garnish.
  2. Cook Noodles – Add ramen to broth and cook 2–3 mins until tender.
  3. Add Veggies – Add mushrooms, then spinach last minute. Stir gently.
  4. Season – Add chili garlic sauce and taste for soy sauce.
  5. Serve Bowls – Divide noodles and broth. Top with egg and garnish.
