Ingredients
  

For the Casserole
  • 2 lbs ground beef 80/20 for best flavor
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 teaspoons salt divided
  • 1 teaspoon black pepper divided
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 6 medium russet potatoes peeled, sliced ¼ inch thick
  • 3 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 2 tablespoon butter cut into small pieces
  • ¼ cup beef broth or water
Optional Add-Ins
  • 1 can cream of mushroom soup for creamier casserole
  • 1 cup mushrooms sliced
  • 1 cup bell peppers diced
  • 1 tablespoon Worcestershire sauce adds umami

Equipment

  • 1 Large skillet For browning ground beef
  • 1 Mandoline or sharp knife For slicing potatoes evenly

Method
 

  1. Cook ground beef in skillet; add onion, garlic, and half the seasonings. Drain excess grease.
  2. Slice potatoes into ¼-inch rounds; soak briefly in cold water and pat dry.
  3. Add half the potatoes to greased 9×13 dish and season lightly.
  4. Spread cooked ground beef evenly over potato base.
  5. Add remaining potatoes; dot with butter; pour broth around edges.
  6. Cover tightly with foil and bake at 350°F for 60 minutes.
  7. Remove foil, sprinkle cheeses on top.
  8. Bake uncovered 15 minutes until cheese is melted and golden.
  9. Let stand 10 minutes before slicing.
