Ham & Cheese Egg Muffin Cups

Ingredients
  

  • 12 slices sliced deli ham for cup base
  • 12 large eggs freshly cracked
  • 1 cup shredded cheddar cheese for melting
  • ½ teaspoon salt and black pepper to taste

Equipment

  • 1 Muffin tin Standard 12-cup size
  • 1 Cooking spray For greasing
  • 1 Butter knife For loosening edges

Method
 

  1. Spray a standard twelve cup muffin tin generously with nonstick cooking oil to prevent sticking.
  2. Press one slice of deli ham firmly into each greased muffin cup to form a base.
  3. Sprinkle a small handful of shredded cheddar cheese into each ham cup evenly.
  4. Crack one large egg carefully directly into the center of each lined cup.
  5. Season the top of each raw egg with a pinch of salt and pepper.
  6. Bake at 375 degrees Fahrenheit until the egg whites are completely set and edges crisp.
  7. Remove the pan from the oven and let the warm muffin cups rest briefly.
  8. Run a butter knife around the edges to release each warm cup before serving.

Notes

Grease the muffin tin thoroughly so the baked ham and egg bites release easily without sticking.
