  • 1 lb lean ground turkey 93% lean preferred
  • 2 cups cooked jasmine rice White or brown
  • 1 cup shelled edamame Thawed
  • 1 cup carrots Shredded
  • 1 cup English cucumber Sliced
  • 2 cloves garlic Minced
  • 1 teaspoon fresh ginger Grated
  • 2 tablespoon soy sauce Low sodium
  • 1 tablespoon sesame oil For cooking
  • ¼ cup mayonnaise For sauce
  • 1 tablespoon sweet chili sauce For sauce
  • 1 teaspoon Sriracha Adjust to taste
  • 2 stalks green onions Sliced for garnish
  • 1 teaspoon black sesame seeds Garnish

Method
 

  1. Cook jasmine rice according to package instructions until fluffy.
  2. Brown turkey in sesame oil; stir in garlic, ginger, and soy sauce.
  3. Whisk mayonnaise, sweet chili sauce, and Sriracha in a small bowl.
  4. Assemble bowls with rice, turkey, edamame, carrots, and cucumbers.
  5. Drizzle with sauce and top with green onions and sesame seeds.

Notes

Serve the rice and meat hot, but keep the veggies cold for the best texture contrast. Great for meal prep.
