Ingredients

  • 12 oz Rotini pasta - Or substitute penne, orzo, or gluten-free
  • ¼ cup Olive oil - Extra virgin preferred
  • 2 tablespoon Lemon juice - Freshly squeezed
  • 1 tablespoon Red wine vinegar - Or substitute white wine vinegar
  • 1 teaspoon Dijon mustard - Adds slight tang and richness
  • 1 clove Garlic - Minced
  • 1 teaspoon Dried oregano - Preferably Greek oregano
  • Sea salt - To taste
  • Black pepper - To taste
  • 1 cup Cherry tomatoes - Halved
  • 1 cup English cucumber - Diced with skin on
  • ½ cup Red onion - Thinly sliced
  • 1 cup Feta cheese - Crumbled from block
  • ½ cup Kalamata olives - Pitted
  • 2 tablespoon Fresh parsley - Chopped
  • 1 tablespoon Fresh dill - Optional

Instructions 

  • Cook pasta until al dente, rinse under cold water, drain well, and toss with olive oil.
