Instructions
Peaches in boiling water 1 minute, ice bath
Remove skins, pit, and roughly chop peaches
Peaches with sugar, water, lemon juice 10 minutes
Peach mixture 8-10 minutes until soft
For smooth or mash for chunky texture
Peach puree completely before mixing
Sugar in fresh lemon juice in pitcher
Cooled peach base with lemon mixture
Cold water slowly while stirring
Over ice with fresh peach and mint garnish
Notes
