Equipment

  • 1 Cast iron skillet (For grilling)
  • 1 Spatula (Wide flat)
  • 1 Small bowl (For avocado mash)

Ingredients

  • 4 slices Sourdough bread - Thick cut
  • 1 cup Chicken breast - Cooked and sliced
  • 1 large Avocado - Mashed slightly
  • 4 slices Cheddar cheese - Sharp
  • 2 tablespoon Red onion - Finely diced
  • 2 tablespoon Butter - Softened
  • 1 tablespoon Parsley - Chopped

Instructions 

  • Mash the avocado with red onion, salt, and pepper in a small bowl.
  • Butter one side of each bread slice thoroughly.
  • Place bread butter-side down in a skillet and layer with cheese, chicken, avocado mash, and more cheese.
  • Top with the second slice of bread, butter-side up.
  • Grill on medium-low heat for 4-5 minutes per side until golden brown and cheese is melted.
  • Slice in half and garnish with fresh parsley to serve.

Notes

Cook on medium-low heat to ensure the cheese melts fully before the bread burns. Use mayo on the outside of the bread for an extra crispy crust.
