Ingredients
  

  • 4 slices Sourdough bread Thick cut
  • 1 cup Chicken breast Cooked and sliced
  • 1 large Avocado Mashed slightly
  • 4 slices Cheddar cheese Sharp
  • 2 tablespoon Red onion Finely diced
  • 2 tablespoon Butter Softened
  • 1 tablespoon Parsley Chopped

Equipment

  • 1 Cast iron skillet For grilling
  • 1 Spatula Wide flat
  • 1 Small bowl For avocado mash

Method
 

  1. Mash the avocado with red onion, salt, and pepper in a small bowl.
  2. Butter one side of each bread slice thoroughly.
  3. Place bread butter-side down in a skillet and layer with cheese, chicken, avocado mash, and more cheese.
  4. Top with the second slice of bread, butter-side up.
  5. Grill on medium-low heat for 4-5 minutes per side until golden brown and cheese is melted.
  6. Slice in half and garnish with fresh parsley to serve.

Notes

Cook on medium-low heat to ensure the cheese melts fully before the bread burns. Use mayo on the outside of the bread for an extra crispy crust.
