- Mash the avocado with red onion, salt, and pepper in a small bowl.
- Butter one side of each bread slice thoroughly.
- Place bread butter-side down in a skillet and layer with cheese, chicken, avocado mash, and more cheese.
- Top with the second slice of bread, butter-side up.
- Grill on medium-low heat for 4-5 minutes per side until golden brown and cheese is melted.
- Slice in half and garnish with fresh parsley to serve.
Notes
Cook on medium-low heat to ensure the cheese melts fully before the bread burns. Use mayo on the outside of the bread for an extra crispy crust.
